I’m thinking moms cookies after a long day, the comfort and love she was able to share through such a small, delicious gesture. Or the smell of a bbq, bringing you back to the final days of summer before school that you spent running through a sprinkler, the fresh cut grass sticking to your legs; not a care in the world. These tastes and smells can bring back the most beautiful memories.

My all time favourite smell is the sweet, smoky aroma that lingers after a night by the campfire. There’s something about sitting by a fire into the night that grounds my soul, breathes life back into my bones and makes me feel connected to myself and the simplicity of life.

When working with flavours at the light cellar lately, I keep being drawn back to the smoky taste of the Kiawe salt. For me, I am brought back to those times by the fire, when everything slows down and problems fade away. Paired with our stone ground chocolate, crunchy almonds, and rounded out with a subtle taste of rich mesquite, this bar is one you won’t want to miss.

Not only does mesquite have a deliciously subtle smokey flavour, it’s high in protein, with measurable amounts of calcium, magnesium, potassium, iron, and zinc.

The wild harvested Kiawe smoked sea salt we carry here at the Light Cellar, is made by smoking the sea salt with Kiawe wood, which comes from a thorny, bushy tree similar to mesquite. The salt is transformed into a very dark iridescent ebony colour, with a bold, rich and smoky flavour.

Together in our bar of in-house stone ground chocolate from Ecuadorian cacao beans, topped with crunchy almonds, the experience is a rich, smokey, salted chocolate bar that’ll be an experience worth remembering.
